Stuart takes pride in the quality of its Dining Services. The eight-member Dining Services staff prepares nutritious meals that feature fresh, seasonal ingredients. Each lunch features a hot entrée, salad bar with field greens, fresh-cut fruits and vegetables, yogurt and legumes. Two soup selections, freshly made, are also available daily.
- Sandy Harkness and Damon Giancola
Sandy Harkness, Food Service Director of Stuart’s Dining Services team, has been with the school since 1998. A graduate of the Culinary Institute of America (CIA), Harkness came to Stuart from Atlanta, where she exercised her culinary education working in various areas of the field, including restaurant management, retail and an apprenticeship with Helmut Holzer, CMC.
Assisting her is Damon Giancola, a graduate of the Restaurant School of Philadelphia. Well known for his delicious soups and sauces, Giancola was voted Chef of the Year in 2006 by his colleagues at the American Culinary Federation’s Professional Chef’s Guild of Central New Jersey.
